Cucumber Tuna Bites
Cucumber boats are an excellent way to reduce carbs and increase vegetable intake. Instead of using heavy mayonnaise in the tuna salad, this version uses Dijon mustard and a touch of light mayo (or Greek yogurt). The cucumber provides a wonderful crunch and hydrating fluids.

- 1 long, firm cucumber
- 60 g canned tuna in water, well-drained
- 15 g light mayonnaise (1 tbsp) or light Greek yogurt
- 1 tsp Dijon mustard
- 1 tbsp green onion, finely chopped
- Salt, ground black pepper, and a splash of fresh lemon juice

Wash the cucumber, cut it in half lengthwise, and scoop out the seeds using a small spoon to form a "boat".

In a small bowl, combine the drained tuna, light mayo, mustard, green onion, lemon juice, salt, and pepper until uniform.
